Paleo Breakfast Hash

I have been cooking up a storm lately. I feel like I’m nesting. Before you even think it, no more primal babies for this household! We’re getting prepped to get a new kitchen over the next couple of weeks. I’m trying to stay ahead of the game for once and keep as much easy to heat up food in the fridge.

I’ve been thinking about hash lately (the food, not the stuff they sell in “coffee shops” in Amsterdam.) I wanted it to be savory and was worried the sweet potatoes might make it too…well, sweet. I added bacon grease, sausage, and eggs. It turned out delicious. It is officially my husband’s new favorite breakfast so I decided to share it!

Shredded sweet potatoes are a must have in my fridge these days. I’ve been using them for potato pancakes, sweet potato muffins, and now sweet potato hash:
6 eggs
2 cups shredded sweet potatoes
1/2 pound of breakfast sausage
black pepper to taste
I browned the sausage in bacon grease for extra flavor. However, you can just cook the sausage without any grease or oil. Once it’s cooked add the sweet potatoes for a couple of minutes until they start to soften. Next crack the eggs right into the pan and mix all ingredients until the eggs are cooked through.
