Diana Rodgers is this week’s guest on Born Primal because she’s presenting at the Ancestral Health Symposium and she’s celebrating a milestone. Her brand new book Paleo Lunches and Breakfasts On The Go comes out this week! We discussed the book in great detail on the podcast so tune in to hear more about it. It’s beautifully put together with photographs of animals from her farm and the gorgeous food she’s created. The recipes are simple enough for those of us without culinary skills (ahem, yes that’s me) to put together but so well done that you’ll feel like a Master Chef competitor when you’re finished cooking! Diana is a Nutritional Therapy Practitioner and is studying to become a Registered Dietician. She knows her stuff when it comes to explaining the key elements of nutritional balance but also emphasizing her passion towards sustainability. Possibly the piece that sets this cookbook apart from the rest. There are tips for dining out, busy travelers, and the most common Paleo questions and pitfalls are covered.
I love anything wrapped in lettuce so I decided to make the Portable Tuscan Wraps for dinner with a friend. Granted my friend did go to culinary school so the presentation is lovelier than it would have been if I’d put it together but I’m sure it still would have tasted amazing with these can’t go wrong ingredients like prosciutto, sopressata, Genoa salami, capacollo, pesto, and roasted red peppers. It reminded me of some of my favorite Italian subs that I’ve missed so much. Replace bread, add romaine, and go!
This cookbook is a must have for any Paleo family tired of coming up with easy, quick meals. Diana has done all the work for you! You can order Paleo Lunches and Breakfasts On The Go online.
